Cândido - Red Reserve
TEST NOTES: Opaque red colour, deep and concentrated, revealing from the first glance the intensity that marks this tribute to the owner of the house: Dr Cândido Ferreira. On the nose, the characteristic aromas of Alicante Bouschet stand out, with notes of blackberry, ripe plum and subtle hints of balsamic. Ageing in French oak barrels adds elegant layers of spice, smoke and roasting nuances, harmoniously integrating with the expressive fruit that the Serra de São Mamede provides so well. On the palate, it is intense, raw and vigorous, with firm acidity and dense, striking tannins that promise remarkable evolution in the bottle. It's a wine to keep for a long time, where the marriage between the aromatic fruit and the character of the wood will gain complexity and balance over time, revealing the full potential of the variety and the terroir.
VINIFICATION: Manual harvesting. Partial destemming. Fermentation in a temperature-controlled press with foot treading. 25% of the batch is fermented with the stems. Internships1 year in 500 litre French oak barrels, two of them new;
